Strawberry Salad

This salad is one that kids and adults both enjoy. The dressing is sweet, which appeals to kids, even though the base is raw spinach. Strawberry season isn’t until May in the Northeast, but I recently had some from the supermarket and had to make this salad. I can’t wait for the farmer’s markets to open again and for local strawberries to be available.

Tips:

  • Avoid putting the cheese in the salad before tossing, otherwise it will fall apart.

  • Dressing will keep a day in the refrigerator. Just bring to room temperature before using.

Spinach and Strawberry Salad

Makes 4

PREP 5 minutes

INGREDIENTS

Baby spinach

Sliced red onion

Feta cheese

Sliced strawberries

Pecans, optional

DRESSING

2T strawberry jam

1T balsamic vinegar

3 T olive oil

Salt and pepper, to taste

Poppy seeds, optional

INSTRUCTIONS

  1. For dressing, combine all ingredients in a small bowl and whisk until smooth. Set aside.

  2. Combine all the salad ingredients, minus the cheese in a large bowl.

  3. Toss the salad with the dressing, evenly coating the salad. Add the feta and adjust seasoning with salt and pepper. Serve immediately.
